I LOVE LEFTOVER NIGHT! I don’t have to cook and I don’t have to think.
We always have leftovers. We actually plan it that way. If there is a lot of leftovers then they get frozen for another meal. Or sometimes I plan the leftovers so we can have them for lunch. But many times there isn’t enough to freeze and I have a serious problem with throwing away food.
I would say that we end up having leftover night at least 6 times a month. There are always going to be nights that someone doesn’t like the plan for dinner. Leftovers cure that issue.
We also aren’t afraid to change up leftovers. Just because chicken started out as one thing, doesn’t mean it won’t end up in taco’s, a salad or a casserole on another day.
I’ll never forget the cool idea I saw when the kids were much younger. The mom had made up a little menu of the leftovers and the family got to place their order just like at a restaurant. Now I’m not saying I have much time for that, but boy it would sure work with little one’s that are more picky. Plus for those of us trying not to eat out, this would make it feel like they’d been out to eat.
Then make them do the dishes so it feels like YOU WENT OUT TO EAT ALSO! lol
